So far we&#8217;ve tried your typical <a href="http://elisfanclub.com/2007/10/23/wacky-cake">Wacky Cake</a>, <a href="http://www.chooseveg.com/display_recipe.asp?recipe=225">Vegan Shortcake</a>, <a href="http://elisfanclub.com/2009/06/28/vanilla-almond-wacky-cake">Vanilla Almond Wacky Cake</a>, and last night we experimented a bit more.</p>
<p><strong>Lemon Vanilla Wacky Cake</strong></p>
<p>(for a 8&#8243; square/circle pan, double this recipe for a 9 by 13)</p>
<p>Sift together into the pan in which you will be baking the cake:</p>
<ul>
<li>1 3/4 cups flour</li>
<li>1 cup sugar</li>
<li>1 teaspoon baking soda</li>
<li>1/2 teaspoon salt</li>
</ul>
<p>Mix the dry ingredients together with a fork, making sure to get an even mixture. Then make 4 wells (some big, some small, and some just right) in the dry ingredients. Pour one of the following ingredients into each of the wells (respectively):</p>
<ul>
<li>1 tablespoon vinegar</li>
<li>1/3 cup oil</li>
<li>1 teaspoon vanilla</li>
<li>2 teaspoon lemon zest</li>
</ul>
<p>Then pour 1 tablespoon of lemon juice into 1 cup of cold water and pour that over the whole thing: mix well with a fork. Bake at 350 degrees for 30 to 35 minutes&#8230; until a toothpick comes out clean.</p>

In an effort to try out all possible options for a Vegan Wedding Dessert, I took a cue from Sylvia and went with the Vanilla Almond. It <strong>just</strong> came out of the oven and it smells delicious!</p>
<p><strong>Vanilla Almond Wacky Cake</strong></p>

<p>i first discovered this recipe in the <a href="http://www.google.com/url?sa=t&amp;ct=res&amp;cd=2&amp;url=http%3A%2F%2Fwww.amazon.com%2FNew-Farm-Vegetarian-Cookbook%2Fdp%2F0913990604&amp;ei=yo6MR-74JYHKjgHl-7TZDA&amp;usg=AFQjCNElku53iJJXNrNLeXUlgOt30rxHaw&amp;sig2=dOcLfJOnoJiX9-i00aMX5Q">New Farm Vegetarian Cookbook</a>, and you will not find a better recipe for vegan mac &amp; cheese.  enjoy.</p>
<p>&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8211;</p>
<p><strong>vegan mac &amp; cheese</strong></p>
<ul>
<li>cook 3.5 cups of macaroni, strain, and set aside.</li>
<li>in a large sauce pan, melt 1/2 cup margarine on med heat, then add:
<ul>
<li>1/2 cup flour &#8211; mix til smooth and bubbly</li>
<li>3.5 cup boiling water <strong>very</strong> slowly</li>
<li>1.5 tsp salt</li>
<li>2 tbsp soy sauce</li>
<li>1.5 tsp garlic powder</li>
<li>a pinch of tumeric</li>
</ul>
</li>
<li>cook until thick</li>
<li>add the following <strong>very</strong> slowly:
<ul>
<li>1/4 cup oil</li>
<li>1 cup nooch (large flake nutritional yeast)</li>
</ul>
</li>
<li>mix with noodles</li>
<li>pour in casserole</li>
<li>bake at 350 for 15 minutes</li>
</ul>
<p>usually i double the recipe and that seems to fit really well (with a bit left over for snacking while cooking) into a regular-sized rectangular casserole dish.</p>

<p>Bake at 350 degrees for 20 &#8211; 25 minutes&#8230; until a toothpick comes out clean.  </p>

			<content:encoded><![CDATA[<p>i fucking LOVE pumpkin pie.  i don&#8217;t know if y&#8217;all are aware of how much i love it, but it&#8217;s like one of my most favorite things in the whole world.  seriously.  i had 4 slices (1/2 a pie) on thanks giving and still could have eaten more.  </p>
<p>what was most exciting about <i>this</i> thanksgiving is that i finally perfected my recipe.  ever since i became vegan (about 3 years ago) i&#8217;ve been working on this recipe and doing everything i could to make it delicious.  it all came together this time and i&#8217;m finally ready to release it to the world.</p>
<ul>
<li>1 15 oz. can of pumpkin</li>
<li>1 12 oz. pack of firm silken tofu</li>
<li>1 <b>HEAPING</b> cup of brown sugar</li>
<li>3 tsp of pumpkin spice*</li>
<li>1 tbsp of corn starch</li>
</ul>
<p>put all that into a food processor and blend the shit out of it.  when it&#8217;s nice and wonderfully smooth, poor it into a pie crust.  bake at about 400 degrees for about 30 minutes, but keep your eyes on it in case it gets out of hand.  serve chilled.</p>
<p>*the pumpkin spice can be pre-made or you can mix your own.  i know that the total of the ingredients below is short 1/3; i thought i&#8217;d leave that for you to decide.</p>
<ul>
<li>4/3 tsp ground cinnamon</li>
<li>2/3 tsp ground ginger</li>
<li>1/3 tsp allspice</li>
<li>1/3 tsp nutmeg</li>
</ul>

			<content:encoded><![CDATA[<p>i&#8217;ve made pancakes and waffles quite a bit in my life, and it seems that everytime i need to make them i am always looking up a different recipe each time.  this morning i think i found a winner that i wanted to share with the world.  it&#8217;s very simple and delicious.</p>
<ul>
<li>1 cup (whole wheat) flour</li>
<li>1 cup soymilk or water</li>
<li>1 tablespoon oil</li>
<li>1 tablespoon baking powder</li>
<li>1 tablespoon maple syrup</li>
</ul>
<p>just whisk those ingredients together and then either pour onto a greased skillet or waffle iron and wait for the joy to come.  this recipe makes enough for about 1.5 people (depending on the people) or enough to fill a full size waffle iron (with 4 quandrants) once or make about 4 pancakes.  i am waiting for the first waffle with this recipe to be ready, but when it comes out i&#8217;m gonna eat it and love it.</p>
<p><strong>UPDATE:</strong> i was talking to bookis and scott today and they were telling me that i can simplify this even further by removing the maple syrup and the oil.  how you like these apples:</p>
<ul>
<li>X cup(s) (whole wheat) flour</li>

<li>X tablespoon(s) baking powder</li>
</ul>
<p>where X equals the number of people you are trying to server.  enjoy!</p>
