wacky cake

this is a recipe that i absolutely LOVE, and it’s naturally vegan. i think i’ve asked my mom for it about a half-dozen times, so i’m finally posting it here so i’ll never have to ask for it again (although i’m sure she loves giving it to me every time i ask).

i was asking for the recipe now because i thought it would be really cool to see if any of the bakers here at McMurdo would be willing to make this for dessert some day.

Wacky Cake

(For a 8″ square/circle pan. You can double this for a 9 by 13)

Sift together into the pan that you will be baking the cake in:

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/4 cup cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Make three wells in the sifted ingredients. Put one of the following ingredients into each of the wells:

  • 1 tablespoon vinegar
  • 1/3 cup oil
  • 1 teaspoon vanilla

Pour 1 cup of cold water over the ingredients and mix well with a fork.

Bake at 350 degrees for 20 – 25 minutes… until a toothpick comes out clean.

YUMMY!!!!!!

    I am sure you like this recipe because it is vegan, but it was not created for that purpose. It was created because of rationing during WWII. Then eggs and butter (and many other things) were hard for civilians to get. This cake was a “work around” those shortages.

    Hey! Tell me about “condition 2″–what does that mean? I need some details of things that are obvious to you because you’re there, but which we in Indiana have no idea about. Like…what were you looking out at when you were on Ob Hill? Where was that truck coming from? Is there other things (places) in Antarctica nearby? Tell me some of the things you learned at the meeting about being outisde in the cold for prolonged periods of time! You said it was required to go on “longer hikes” — have you gone on any longer hikes? where do those hikes even go to? These are all things I’m curious about, and you give a recipe for weakling/hippie-cake?? (just kidding, I’ll try and probably enjoy the recipe :)
