i’ve made pancakes and waffles quite a bit in my life, and it seems that everytime i need to make them i am always looking up a different recipe each time. this morning i think i found a winner that i wanted to share with the world. it’s very simple and delicious.
- 1 cup (whole wheat) flour
- 1 cup soymilk or water
- 1 tablespoon oil
- 1 tablespoon baking powder
- 1 tablespoon maple syrup
just whisk those ingredients together and then either pour onto a greased skillet or waffle iron and wait for the joy to come. this recipe makes enough for about 1.5 people (depending on the people) or enough to fill a full size waffle iron (with 4 quandrants) once or make about 4 pancakes. i am waiting for the first waffle with this recipe to be ready, but when it comes out i’m gonna eat it and love it.
UPDATE: i was talking to bookis and scott today and they were telling me that i can simplify this even further by removing the maple syrup and the oil. how you like these apples:

- X cup(s) soymilk or water
- X tablespoon(s) baking powder
where X equals the number of people you are trying to server. enjoy!
